Easter is a feast holiday. Though not everyone observes the religious aspects of this day, it is pretty safe to say that everyone eats on it. If you are hosting an Easter celebration, there are a few traditional items you can set out. Lamb, often served with mint jelly, is symbolic of the meaning of the day and is generally eaten as part of the celebration. As for roasted potatoes, they nicely complement any roast.

Leg of Lamb

Ingredients:
  • 1 leg of lamb
  • Several cloves of garlic
  • 1/2 tsp thyme leaves, crushed
  • 1 tsp rosemary leaves, crushed
  • 1/2 tsp salt
  • 1 tsp fresh ground black pepper
  • 1/4 tsp. oregano
  • 2 tbsp flour
  • 1/4 c. tarragon vinegar
  • 1/4 cup water
  • 1 cup dry red wine
Directions:
  1. Preheat the oven to 350 degrees.
  2. Using a sharp knife, insert slivers of the garlic into the lamb.
  3. Combine thyme, oregano, rosemary, salt, pepper, and flour. Rub well into lamb.
  4. Combine vinegar and water and pour over the lamb.
  5. Roast 1 hour.
  6. Lower oven to 300 degrees and insert a meat thermometer.
  7. Cover the roast in the wine.
  8. Roast for an additional 1 - 1.5 hours, depending on how well you want it cooked.

Oven Roasted Potatoes

Ingredients:
  • 2 lbs potatoes (red or other), cubed
  • 2 yellow onions, sliced
  • 1 tbsp thyme
  • 1 tbsp rosemary
  • Olive oil
  • Salt and pepper to taste
Directions:
  1. Preheat the oven to 425 degrees.
  2. Place the potatoes and onions in a casserole dish and drizzle them with olive oil. Sprinkle with thyme, rosemary, salt, and pepper.
  3. Roast for 45 minutes - 1 hour, checking on them halfway through.

Mint Jelly

Ingredients:
  • 1/2 cup fresh mint leaves
  • 1 1/4 cup boiling water
  • 3 cups sugar
  • 1/2 cup liquid fruit pectin
  • Green food coloring (optional)
Directions:
  1. In a pot, add the boiling water to the mint leaves.
  2. Allow to stand for 1 hour.
  3. Add the sugar and bring to a boil. Strain.
  4. Add fruit pectin and green food coloring (if desired).
  5. Bring to a rolling boil and let boil for 1 minute.
  6. Remove from heat and pour into serving dish(es).
