Passover is a holiday full of ancient traditions, and the holiday meal is no exception. Families gather together on Passover to eat traditional foods, such as charoset and matzo ball soup. Below are some recipes to make your Passover dinner a memorable one.

Charoset

Charoset, a staple on the Seder plate, is a sweet mixture of apples and wine that can be spooned onto matzo or eaten on its own.

Ingredients:
  • 2 Apples
  • 1 Cup of chopped walnuts
  • 2 Tablespoons red wine
  • Ground cinnamon
  • Sugar
  1. Using a hand grater, grate the apples into a large bowl.
  2. Mix walnuts and wine in with the apples.
  3. Add cinnamon and sugar according to your preference.
  4. Mix ingredients together and refrigerate until ready to serve.
Matzo Balls

It wouldn't be Passover without some matzo ball soup. These matzo balls make a welcome addition to your favorite soup recipe

Ingredients:
  • 4 Eggs
  • 1 Cup matzo meal
  • 1/2 Cup water
  • 1/3 Cup vegetable oil
  • Dash of salt
  • Dash of pepper
  1. In large bowl, beat the eggs and then mix in the water, vegetable oil, salt, and pepper.
  2. Pour in the matzo meal and stir until thoroughly combined.
  3. Cover with plastic wrap and put in the refrigerator for at least 30 minutes.
  4. Fill a pot with 1.5 quarts of water and heat to a boil.
  5. As water heats up, roll the mixture into balls with a 1-inch diameter. Keep your hands wet with water to prevent the mixture from sticking to your hands.
  6. After you have used all of the mixture, drop the balls into the boiling water and cook for 20 minutes.
  7. Once the matzo balls are done cooking, you can add them to your favorite soup.
Potato Kugel

With the absence of bread during Passover, potatoes become the starch of choice. This potato kugel is a simple but satisfying side dish.

Ingredients:
  • 5 Large potatoes
  • 1/3 Cup of vegetable oil
  • 1 Onion
  • 4 Eggs
  • 1/3 Cup of matzo meal
  • 2 Teaspoons of salt
  • 1/2 Teaspoon of pepper
  1. Preheat oven to 375° F.
  2. Peel the potatoes, and then grate either by hand or in a food processor and put in large bowl.
  3. Peel and chop or grate the onion, and mix together with potatoes.
  4. In separate bowl, beat the eggs along with the salt and pepper.
  5. Add the egg mixture to the potato mixture and thoroughly combine.
  6. Put the vegetable oil in a 9x13-inch baking dish and place in the oven for around 5 minutes.
  7. Remove dish from the oven and pour about half of the heated oil into the potato mixture, stirring together.
  8. Carefully spoon the potato mixture into the baking dish.
  9. Put dish in the oven for 45 - 60 minutes, or until the top is golden brown.
Passover Brisket

Brisket is a staple dinner for any Jewish holiday. This special recipe combines a rich and flavorful sauce with hearty vegetables.

Ingredients:
  • 1 Beef brisket
  • 8 Carrots, cut into bite-sized pieces
  • 8 Stalks of celery, cut into bite-sized pieces
  • 8 Onions, cut into quarters
  • 2 Cups of red wine
  • 4 Cups of beef stock (canned or homemade)
  • 1/2 Cup of sugar
  • Salt and Pepper to taste
  1. Preheat oven to 375° F.
  2. Put the brisket fat-side-up in a large roasting pan and season with salt and pepper.
  3. Cover meat with the vegetables.
  4. Mix the wine, stock, and sugar together, and pour over the meat.
  5. Cover the meat with foil and put in the oven for 3 to 4 hours, or until the brisket is soft. (Test for doneness by sticking fork in it. If there is little resistance, it should be ready.)
  6. Remove the brisket from the oven and put it on a cutting board to cool for half an hour.
  7. Slice the brisket across the grain in slices of your desired thickness.
  8. Once sliced, return the meat to the pan and put back in oven to heat it up again.
  9. Arrange the brisket and vegetables on a platter and serve.
Dessert

Since most cakes and cookies can't be eaten on Passover, good Passover desserts can be hard to come by. Instead of going through the trouble of baking a Passover cake, you can just create a chocolate fondue. Melt some chocolate in a bowl and cut up your favorite fruits to dip in it. You can even dip some matzo into it!
