A three-course meal can easily satisfy the taste buds of all your guests during Thanksgiving. Planning which recipes you want to use as your appetizer, salad, and dessert can help you leave plenty of room for turkey and other entrées. These recipes are sure to make your Thanksgiving feast a hit!

Appetizer
Corn-Stuffed Acorn Squash

One cup of yellow and red corn
One cup of water
Four small acorn squashes
½ cup of yellow raisins
One cup of pine nuts, finely chopped
One cup of red onion, finely chopped
Two tablespoons chopped fresh thyme
Two tablespoons chopped parsley
½ cup grated mozzarella cheese
Salt and pepper
  1. Pour water into a medium-sized pot and bring to a boil. Add the corn, reduce the heat, and cook for 5 minutes on a low setting.
  2. Preheat the oven to 350 degrees.
  3. Cut off the top quarter (stalk end) of each squash. Make sure to keep the squash tops so that you can use them later. Remove the seeds and fibers from the center of the squash with a spoon. Season the insides of each squash with salt and pepper, and then place them in a roasting pan.
  4. Mix the corn, yellow raisins, pine nuts, red onion, thyme, parsley, and cheese all together in a large bowl. Next, spoon the mixture into each squash and place the saved squash tops back on top.
  5. Bake until the skin of the squash has softened for about 45 minutes and serve.
Salad
Cranberry, Maple, and Toasted Almond Salad

One package dried cranberries
One package of toasted almonds
¼ cup of water
One cup of maple syrup
Three cups of spinach leaves
One cup of crumbled gorgonzola cheese
  1. Combine cranberries and almonds in a small bowl.
  2. Take water and mix with maple syrup. This will be the dressing for the salad.
  3. Take spinach leaves and place in a medium-sized serving bowl.
  4. Mix the spinach, cranberries, and almonds together.
  5. Pour the desired amount of dressing on the salad.
  6. Sprinkle the cheese on the salad and serve.
Dessert
Chocolate Pudding Pie

One package of chocolate pudding mix
½ quart of whole milk
One teaspoon vanilla
One teaspoon nutmeg
One tablespoon of molasses
One pre-cooked pie crust
  1. Combine the chocolate pudding mix with milk and set inside the refrigerator.
  2. In a small mixing bowl, combine vanilla, nutmeg, and molasses.
  3. Then combine the vanilla, nutmeg, and molasses with the pudding.
  4. Pour pudding mixture into the pre-cooked pie crust.
  5. Cover the pie with plastic and chill until it is ready to serve.
